1 cup sugar

cream together
1/4 cup olive oil
sprinkling vanilla essence
mix
zest and juice from one lemon
mix
1 1/2 cups flour
pinch baking powder
pinch salt
mix well
put into pan
dust top with coconut shavings
bake
(cover after shavings turn brown to prevent from burning)
