Cinnamon Rolls (with Caramel Sauce)

1/2 cup warm water
1 tbs sugar
1 packet yeast

let stand

3 cups flour
pinch salt
1/2 cup scalded milk
1/3 cup fat spread
1 egg

knead

add yeast mix

knead

let rise until double 

roll into rectangle

1/4 cup fat spread
sugar
cinnamon

sprinkle over rectangle

cut into strips and roll

spread butter and sprinkle pan with sugar

let rise again

bake till golden

New York Cheesecake

flour
cereal
sugar
butter

mix to make a base that sticks together and tastes nice but not too sweet

pre bake

500g (approx 3 packets) cream cheese
1 1/2 cup sugar

mix

1/2 cup milk

add 4 eggs one at a time

1 cup cream with vinegar (or sour cream)
1 tbs vanilla essence
1/4 cup flour

mix

pour onto crust

bake till golden top and almost clean knife

detach sides and let cool in oven overnight (prevents cracks)

fridge next day

Chicken Biryani

Marinate 2 hrs or overnight 4 pcs chicken
3 tbs curd
ginger garlic paste
salt
turmeric (haldi)
chilly powder
coriander powder (dhaniya powder)

Oil in pan, shallow fry
10-15 cloves (long)
1 broken cinnamon stick
3-4 bay leaves

Wait for popping
1 long sliced onion
2-3 chopped tomatoes 

Stir
ginger garlic paste
1 chilly scored into 4
2-3 minced (or diced) tomatoes
Cumin seed powder (jeera powder)
coriander powder (dhaniya powder)
turmeric (haldi)
salt

Boil on low for 15-20 mins
add chicken 

Boil on med for 10 mins (half cooked)

add 2 cup rice + 4 cups water

Remove floating spices

Cover and cook till rice cooked

Uncover and cook till water evaporated

Makes enough for 4 full meals

Cheese Dip

1 cup milk
Sprinkling Cornstarch

Simmer and stir till thickens

Add grated cheddar

Salt and pepper to taste


Savoury Pretzels

1 1/4 cup 45 degree water
4 tsp dried yeast
Sprinkling sugar

10 mins, till frothy

3 cups flour
Sprinkling salt
1/2 cup salt

Hole

1 tbs butter
Activated yeast

Knead

Add as much flour as needed to bring to consistency (took me 3/4th cup)

Bunch of chopped chives
1 tbs ginger garlic paste
Sprinkling oregano
Sprinkling pepper

Cover and let double

Cut up and shape


4 cups water
3 tbs baking soda

Dunk and boil for 30 sec

Bake at 5 o clock till golden brown

Cookie Dough for Ice Cream


2/3 cup brown sugar
2/3 cup sugar 
1/4 cup butter
Splash of vanilla essence
2 cups flour
Pinch of salt
Milk till right consistency (not stick but not too hard)
Chopped up chocolate


Made enough generous chunks for 4 litres of plain vanilla
